Plastic handles aren't always good, you'll want something more durable. Not every knife is perfect for everyone. Hold some and make sure the ergonomics fit your hand and the weight balance is evenly distributed. You wouldn't think such care and detail should go into knife selection, but if you get the right set these should last you for the rest of your life and even be something you can pass down to your children. You'll pay more for it, but it's definitely worth it in the end.
